So yesterday got away from me! Argo, the meaning of today’s title! Foodie Tuesday is now Foodie Wednesday! (For this week only folks!)
Mmmm… I can just imagine sitting at my lovely wooden patio set with the umbrella drawn blocking the morning sun enjoying a fresh batch of peach pancakes. As I let the sun hit my toes and warm the pool water, my syrup drizzled pancakes fill my tummy. The perfect cup of coffee is poured and I sip it letting the sounds of the birds and the low hum or the pool pump buzz in my ears.
Too bad I don’t have a pool. Or a wooden patio set. Lovely picture though, isn’t it?
I did in fact try this recipe yesterday… just for you all! (Okay, and maybe a little for my taste buds too 😉 )
I am always getting peaches in my Bountiful Basket. And I can only make so much peach cobbler!
I stole this delectable recipe from Like Mother’s Like Daughter’s blog, who in turn stole it from Kerbey Lane Cafe in Austin, TX. (Apparently, this place is to die for!)
So here’s the recipe!
Gather Up:
Blend egg, milk, and oil. In a separate bowl blend dry ingredients together.
Add dry ingredients to wet ingredients and stir until just combined. Gently fold in peaches. Let sit 5 minutes. Batter will be lumpy.
Heat griddle until drops of water sizzle. Grease lightly if needed.
Drop large spoonfuls of batter onto hot grill and smooth out slightly. Flip pancakes once pancakes puff and bubbles have formed, but before bubbles break.
Turn and brown on the other side, pressing down gently to make sure batter cooks evenly around the fruit.
Serve immediately with powdered sugar, butter, warm syrup, peach butter, or topping of your choice.
